1/2 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup fresh orange juice
2 tablespoons olive oil
1 pound fresh calico bass or sheephead, cut into 1/4-inch slices
1/4 cup chopped fresh cilantro
1 small onion, chopped
4 roma tomatoes diced

In a bowl, combine the lemon juice, lime juice, orange juice and olive oil. Add the fish to the bowl and coat fish with citrus mixture. Cover and marinate in the refrigerator for 2-3 hours. The flesh of the fish should be opaque. When ready to serve, add the cilantro, onion, and tomato and season to taste with salt.
